Mix ground bison with minced garlic, salt, pepper, and a dash of paprika.
Form into 2 patties, about 2cm thick. Press a slight indent in the center.
Heat a cast iron skillet or grill to high heat.
Cook patties 4 minutes per side for medium doneness.
While patties rest, prepare lettuce cups, slice avocado, tomato, and onion.
Place each patty in a double layer of lettuce leaves.
Top with avocado slices, tomato, and thinly sliced onion. Add mustard if desired.
