Heat olive oil in a large skillet over medium heat.
Brown pork sausages on all sides, about 6 minutes. Remove and set aside.
Slice bell peppers and onion into strips. Add to the skillet.
Cook peppers and onions 10 minutes until softened and caramelized.
Add garlic, oregano, and salt. Cook 1 minute.
Return sausages to the pan. Cover and cook 8 more minutes until sausages are cooked through.
Serve hot with the pepper-onion mixture spooned over top.
