Lean turkey meatballs in a simple tomato sauce served over spiralized zucchini noodles. A low-carb, high-protein Italian-inspired dinner.
Combine ground turkey with minced garlic, chopped parsley, salt, pepper, and one beaten egg. Mix well.
Form mixture into 12-15 meatballs, about 3cm each.
Heat olive oil in a large skillet over medium heat. Brown meatballs on all sides, about 6 minutes.
Add diced tomatoes and tomato paste to the skillet. Simmer for 15 minutes.
Meanwhile, spiralize zucchini into noodles (or use a peeler for wide ribbons).
Saute zucchini noodles in a separate pan with a little olive oil for 2-3 minutes.
Serve meatballs and sauce over zucchini noodles. Top with parmesan if desired.
