Preheat oven to 200C (400F).
Cut a deep pocket into each chicken breast horizontally.
Mix crumbled goat cheese with sauteed spinach, garlic, and salt.
Stuff the cheese-spinach mixture into each chicken breast. Secure with toothpicks.
Season outside with salt, pepper, and paprika. Sear in olive oil 3 minutes per side.
Transfer to oven and bake 18-20 minutes until chicken reaches 74C (165F).
Rest 5 minutes. Remove toothpicks, slice, and serve.
